Quick answer - "not many".

The 4 saint class ships (Stenas Galloway, Antrim, Cambria and Caledonia) are as is ex European Pathfinder and St Columba/Stena Hibernia.  Also the Stena navigator.

Irish Ferries ex St Patrick II, Connacht and Leinster are too.

Sure is, visible on Marine Traffic, still in service with fleetmate former St Patrick II.

And the former St Patrick 2 also operating for CTMA as Vacancier has been fined for speeding in the Gulf of Lawrence,
